Products for professionals

Some products on Savor California are available in food service sizes.

Valley Lahvosh has an 85-year history of making traditional crackerbread. The 15� rounds (original and cracked wheat), may be broken and served in a bread basket, or moistened and used for wrap sandwiches. Use a 10� or 5� round for a light and crisp pizza crust (Lahvosh Pizza below). Smaller Lahvosh crackers are available as rounds, hearts, stars, or the Lucky Lahvosh (playing card suits).

The Year of the Heirloom Apple

Celebrate the Year of the Heirloom Apple with Nana Mae's Organics and the girl & the fig, on Thursday, October 7 on the Patio at Estate Restaurant in Sonoma. The 5-course menu, with wines paired to each course, includes Apple-Goat Cheese Fritters, Pork Chops with Apple-Yam Gratin, and Apple-Honey Gelato.

National Rice Month

Celebrate with these delicious recipes:

Festive and delicious Pork Chops with Jubilee� Rice and Peas, using the new multicolored Jubilee Rice blend from family-owned and operated Lundberg Family Farms in the Sacramento Valley.

Or Carmelized Onion, Smoked Gouda and Pecan Rice Tart (below) using Lundberg Family Farms' organic brown rice.

Fall River Wild Rice, a cooperative of 28 small growers, is located in the Fall River Valley of Northern California where soil, water and climate combine for the perfect growing conditions.

Wild rice pairs well with many foods. Wild Rice Artichoke Salad is not only delicious, but also makes a lovely presentation.

Apple harvest time

Apples are the focus of Nana Mae's Organics: juices, apple sauce, apple cider vinegar, and the latest, an apple and fig mostarda. The star of the line-up (above) features Gravenstein apples, from organically farmed trees in Sonoma County.

Bellindora Vinegars blends classic balsamic vinegar with pure natural concentrates from California fruits. Their Apple Balsamic in the vinaigrette for the salad above, compliments the other flavors: Spinach & Pear Salad with Balsamic Apple Vinaigrette.

Apples pair wonderfully with endive (above) from California Endive in Endive, Apple and Parmesan Salad.

Pollen Ranch has a nifty way with apples -- their spice blend called Divine Desserts. Just sprinkle it on apple (or pear) slices, as above, and serve.

Oat Cuisine�s Ginger Pecan Gourmet Granola (below) is full of pecans and dried apple with a bit of a dark edge from molasses and spices. Use it to top Quince, Cranberry, Pecan Crisp.

Other food service products

The Perfect Bite Co. specializes in gourmet mini appetizers and desserts that are made from scratch for food service and retail.

Savory items include Moroccan Chicken, Carmelized Onion and Feta Pastry Kisses, Wild Mushroom and Aged Jack Pizzas. Side dishes include Creamed Spinach and Roasted Brussels Sprouts Au Gratin. Dessert choices include Chocolate Macadamia Nut Tartlets (upper left) and Spiced Apple Streusel.

Olive Street Table uses short French pastry for a selection of frozen pizzas for banquets, catering, bar food, and center of plate, and also the raw, unbaked pastry in sheets and rounds for food service. Individual and assortments of pizzas can also be purchased online.

Their line of sweet and savory French Pastry Tartes (Tomato Tarte upper right) and French Pastry Hors d�oeuvres is prefect for catalog sales, food service, club stores and private label.

March� Noir�s Pasta Caberneti is available for food service and at retail locations in three shapes: Penne (lower left), Rotini and Fettucini. They're made with flour derived from the pomace of Cabernet grapes, which gives them a beautiful Burgundy color and an incredible wine flavor.

Terra Sonoma�s Verjus (lower right) is available in retail bottles, and for food service in their 3-liter �Green Box� environmentally friendly bag-in-a-box. The word VerJus is French for �green juice,� the unfermented juice of semi-ripe winegrapes. A subtle acid, Verjus can be used in place of any other acid in the kitchen, such as lemon juice, red or balsamic vinegar and even rice wine vinegar.
