Veggie Fried Rice

2 cupsCooked rice, room temperature
Tip: cooked the day before works best
3 teaspoonsLight cooking oil, such as grapeseed oil
1Carrot, diced
4 Green onions, diced
6 spearsAsparagus, cut into 1" lengths
½ cupFrozen peas
1Egg, lightly beaten
4 tablespoonsGenuine Grub Organic Fried Rice Sauce

 

Add 2 teaspoons of oil to a frying pan. Sauté carrots, onion, asparagus, and peas on medium-high/high heat until carrots and asparagus are fork tender. Set aside.

Add 1 teaspoon of oil to pan and scramble beaten egg until cooked. Set aside.

Combine vegetables with cooked rice and Genuine Grub Fried Rice Sauce.

Stir mixture until rice is hot and evenly coated with sauce. Then add scrambled egg back in.

Transfer to bowls to serve.

Optional toppings: hot sauce or kimchi.

Serves 2.

NOTES:
Feel free to add / subtract the Fried Rice Sauce to suit your taste preference. And don't limit yourself to just the above veggies. You can use any you have on hand.
