|Sesame oil or coconut oil|
|2 cups ||Diced sweet red onion|
|2 cups ||Thinly sliced "skinny" carrots|
|2 cups ||Shelled edamame|
|2 cups||Roasted corn, cut from the cob|
|1 cup||Diced red bell pepper|
|1 cup||Dried cranberries, raisins, or currants|
|To taste||Zena’s Sassy Almond- or Peanut-Sesame Sauce, Original or Hott! |
Lightly coat a large, heavy pan with oil, and heat.
Add onion, sauté 3 minutes; then add carrot, and sauté another 3 minutes.
Add edamame, corn, bell pepper, and cranberries/raisins/currants, and mix well, cooking until all is hot.
Drizzle Zena’s SASS over all; toss ‘til SASS bubbles.
Serve immediately as a veggie side dish, or chill, and serve as a salad.
