Edamame Salad

Sesame oil or coconut oil
2 cups Diced sweet red onion
2 cups Thinly sliced "skinny" carrots
2 cups Shelled edamame
2 cupsRoasted corn, cut from the cob
1 cupDiced red bell pepper
1 cupDried cranberries, raisins, or currants
To tasteZena’s Sassy Almond- or Peanut-Sesame Sauce, Original or Hott!

 

Lightly coat a large, heavy pan with oil, and heat.

Add onion, sauté 3 minutes; then add carrot, and sauté another 3 minutes.

Add edamame, corn, bell pepper, and cranberries/raisins/currants, and mix well, cooking until all is hot.

Drizzle Zena’s SASS over all; toss ‘til SASS bubbles.

Serve immediately as a veggie side dish, or chill, and serve as a salad.
