Preheat oven to 375 degrees.
Wash chicken thoroughly and pat dry.
Spray a large baking dish with cooking oil.
Pick out the mangos from the granola. They will be a garnish on the side of the chicken.
Place the granola in a food processor and blend to almost a fine consistency.
Mix granola and flour on a flat plate.
In a bowl, mix the egg whites and olive oil with a fork until blended.
Dip the chicken into the egg white mixture, then into the granola mixture. Place the pieces in the baking dish and spray lightly with cooking spray.
Bake in a 375-degree oven for 15 minutes. Flip the chicken and spray again lightly with cooking spray.
Continue baking for an additional 5 - 10 minutes.
Garnish with the pieces of dried mango. Serve with ranch dressing for dipping.
