Gingered Watermelon Gazpacho

4 cupsWatermelon, roughly chopped and seeds removed
1 cupWatermelon, diced to 1"d cubes, seeds removed
1 cupPersian cucumbers, diced
1 cupGreen apple, diced
½ cupCelery staks, inner tender ones, diced
¼ cupFresh mint, finely chopped
1 ½ tablespoons, or to tasteFresh ginger, finely grated
¼ teaspoonSea salt
3 tablespoonsFresh lime juice
1 tablespoonRed wine vinegar
2 tablespoonsBalsamic vinegar
To tasteSleepers Gourmet Zen Seasoning
½ cupGreek yogurt or sour cream, optional

 

Puree 4 cups of watermelon in a blender until smooth. Transfer to large bowl.

Add remaining 1 cup of diced watermelon and next 9 ingredients all chopped to uniform size. Stir to combine.

Cover gazpacho and refrigerate until well chilled-- at least 1 hour and up to 4 hours.

Divide into serving bowls and sprinkle with Sleepers Gourmet Zen™ Seasoning.

Sour cream or Greek yogurt also make an excellent addition. Just a dollop on top is perfect.
