|4 cups||Watermelon, roughly chopped and seeds removed|
|1 cup||Watermelon, diced to 1"d cubes, seeds removed|
|1 cup||Persian cucumbers, diced|
|1 cup||Green apple, diced|
|½ cup||Celery staks, inner tender ones, diced|
|¼ cup||Fresh mint, finely chopped|
|1 ½ tablespoons, or to taste||Fresh ginger, finely grated|
|¼ teaspoon||Sea salt|
|3 tablespoons||Fresh lime juice|
|1 tablespoon||Red wine vinegar|
|2 tablespoons||Balsamic vinegar|
|To taste||Sleepers Gourmet Zen Seasoning|
|½ cup||Greek yogurt or sour cream, optional|
Puree 4 cups of watermelon in a blender until smooth. Transfer to large bowl.
Add remaining 1 cup of diced watermelon and next 9 ingredients all chopped to uniform size. Stir to combine.
Cover gazpacho and refrigerate until well chilled-- at least 1 hour and up to 4 hours.
Divide into serving bowls and sprinkle with Sleepers Gourmet Zen™ Seasoning.
Sour cream or Greek yogurt also make an excellent addition. Just a dollop on top is perfect.
