Seeds & Suds Bruschetta

1 loafFrench bread
¼ cupOlive oil, divided
1 teaspoonMinced garlic
¼ cupMendocino Mustard Seed & Suds
¼ cupGrated Parmesan cheese
¼ cupShredded Mozzarella cheese
6Plum tomatoes, coarsely chopped
Fresh basil, julienned
Scallions, thinly sliced


Heat oven to broil at 425 degrees F.

Slice bread and toast bread slices lightly, to help them stay crisp.

Stir 2 tablespoons oil and next four ingredients together in a medium bowl. Reserve a bit of cheese to add at the end, if desired.

Spread mixture over slices of bread.

Arrange tomato chunks on top of each slice. Sprinkle with salt and pepper. Drizzle with 1 tablespoon of remaining oil.

Broil for 3-5 minutes, just until edges of bread begin to brown.

Finish with chopped basil and scallions and the reserved cheese, if desired.

Serves 6-12.
