Strawberry Avocado Salad

1 bagRomaine lettuce
1 bagBaby spinach
1 pintStrawberries, hulled and sliced
1Avocado, sliced
½ cupSliced almonds
⅔ cupGrated Parmesan cheese
½ cupThe Frosting Queens Striking Strawberry Frosting
⅓ cupRed wine vinegar
1 teaspoonMinced garlic
½ teaspoonSalt
¾ cupVegetable oil

 

Combine the romaine, spinach, strawberries, almonds and cheese in the serving bowl.

Reserve avocado.

Whisk together the dressing, vinegar, garlic and salt until the frosting dissolves.

Slowly whisk in the oil.

Toss desired amount of dressing with the salad. Add avocado and toss lightly.

Serve immediately.
