Avocado-Lime Dressing

1 largeRipe avocado, skin and pit removed
¼ cupExtra virgin olive oil, or avocado oil
¼ cupWater
¼ cupFlat leaf parsley
1 cloveGarlic
½ (or to taste)Lime, squeezed
1 teaspoon21 Missions Agave Nectar
Salt and pepper


Cut the avocado into chunks. Put into a blender.

Add the other ingredients, except the water.

Puree until smooth, adding water as necessary for the desired consistency.

Use a a salad dressing or as a sauce for chicken.
