|1 ½ pounds ||Chicken breast meat|
|2 tablespoons||Olive oil|
|1 cup||Heavy cream|
|½ cup||Chicken broth|
|1 teaspoon||Garlic powder|
|1 teaspoon||Rockin' Rubs Tuscan Temptation Spice Rub|
|½ cup||Parmesan cheese|
|1 cup||Spinach, chopped coarsely|
|½ cup||Sun-dried tomatoes|
The chicken for this recipe can be raw, rotisserie, leftover, whatever is easiest. Cut the chicken into bite-size pieces.
Heat the oil in a saut� pan. Cook (if raw) or brown the chicken.
Add cream, broth, garlic powder, Tuscan Temptation, and cheese to the pan.
Stir constantly over medium-high heat until it starts to thicken.
Add spinach and sun-dried tomatoes and simmer until spinach is wilted.
Add the chicken back into the pan and heat through.
May be served over pasta.
