Magenta Salad

1 packageRice noodles
¾ cupShredded red cabbage
1 ½ cupGrated red beets
5 - 6 Scallions, chopped
½ cupChopped red onion
½ cupSunflower seeds, soaked or toasted
Sue's Organics Ginger Miso Dressing


Cook noodles according to package directions al dente. Drain and cool with cold water.

Toss cabbage, beets and scallions with the cool noodles.

Smother generously with Ginger Miso Dressing.

Top with sunflower seeds.

Serve immediately. *

* Note: Cooked rice noodles do not keep well.
