Chocolate Balsamic Vinaigrette

What better way to indulge in a little chocolate than by adding it to a healthy greens, pine nuts, and feta cheese? You’ll be looking for an excuse to eat your vegetables with this surprising twist on vinaigrette.

2 TablespoonsBalsamic vinegar
2 TablespoonsRice wine vinegar or white vinegar
1 ounceDark chocolate melted, Happy Chocolates
2 TablespoonsWater
½ cupExtra Virgin Olive Oil
1 teaspoonMinced garlic
1 teaspoonKosher salt
To tasteGround pepper

 

Put all the ingredients into a blender and blend on low until mixed, less than a minute.

Makes 1 cup salad dressing; serves large salad for 10.
