Goat Cheese Truffles

6 ouncesBittersweet chocolate (not unsweetened)
6 ouncesCypress Grove Fromage Blanc
2 TablespoonsConfectioner's sugar
½ teaspoonVanilla extract
¼ teaspoonLemon zest
¼ cupUnsweetened cocoa powder,sifted


Melt chocolate in a double boiler, stirring until smooth. Cool slightly.

In a bowl whisk together the Fromage Blanc, confectioner's sugar, vanilla and lemon zest. Whisk in the chocolate until well combined.

Cover and chill the mixture until firm.

Form into balls and roll the balls in the cocoa powder. Chill on parchment until firm.
