Fromage Blanc-Stuffed Baked Tomatoes

8 ouncesBellwether Farms Fromage Blanc
3 TablespoonsExtra virgin olive oil
3 TablespoonsGrated Parmesan, Romano, or Dry Jack cheese
1 TablespoonChopped fresh herbs (chives, tarragon or basil)
To tasteFreshly ground black pepper
4 mediumRipe tomatoes

 

Mix cheeses, oil, herbs and pepper.

Core tomatoes and fill with cheese mixture.

Bake uncovered for approximately 15 minutes at 375.
