Chicken Satay with Peanut Sauce

3 TablespoonsVegetable oil
2Shallots, minced
1 cloveGarlic, minced
2 TablespoonsMinced lemongrass
2 TablespoonsWhite sesame seeds, lightly toasted and coarsely ground
2 TablespoonsOyster sauce
1 TablespoonFish sauce
1 teaspoonSugar
1 ½ poundsBoneless/skinless chicken breasts
To tasteSalt

Soak 30 bamboo skewers in warm water for 30 minutes.

In a small bowl, combine the vegetable oil, shallots, garlic, lemongrass, sesame seeds, oyster sauce, fish sauce and sugar.

Cut the chicken breasts into 3-inch strips, approximately 1-1/2 inches wide and 1/8 inch thick. Thread the chicken onto the skewers. Brush with the marinade and season with salt. Allow to marinate for 30 minutes.

Heat an outdoor grill or grill-pan. Grill over moderately-high heat until done, 4-5 minutes.

Serve with Native Kjalii Peanut Sauce.
