Sticky Sweet Ginger Pork Tenderloin Medallions

1- ½ poundsPork tenderloin, sliced into 12 medallions
½ cupSauce Goddess Sticky Sweet Grill Glaze
2 TablespoonsFresh ginger, grated
2 clovesGarlic, peeled and minced
¼ cupPineapple juice

 

In a small saucepan combine Sauce Goddess Sticky Sweet Grill Glaze, juice, ginger and garlic. Cook until slightly reduced.

Reserve 1/2 cup of sauce in a bowl for basting and dipping.

Place pork tenderloin medallions into a zip top bag, cover with the remaining 1/4 cup of the sauce mixture and close. Marinate at room temperature for 30 minutes (or in refrigerator for up to 2 hours).

Heat grill to medium.

Discard marinade liquid. Place tenderloins on grill and cook until done. Basting constantly with fresh sauce.

Serve with reserved (unused sauce) for dipping.
