Sardine and Bean Bruschetta

1 can (16-19 ounces)Cannellini beans, rinsed and drained
1 canWild Planet Sardines in Olive Oil, drained
1 ½ TablespoonsFresh lemon juice
3 TablespoonsExtra virgin olive oil
1 cloveGarlic, minced
4 slices (1/2" thick)Country-style bread
2 ounces (5 cups)Arugula or watercress

 

Mash beans and half of sardines with a fork. Stir in lemon juice, 1 tablespoon oil, garlic, and salt and pepper to taste.

Toast bread and brush with remaining 2 tablespoons oil.

Top toasts with arugula, bean mixture, and remaining sardines.
