Grilled Endive

California Vegetable Specialties Endive
Olive oil
Salt and freshly ground pepper

 

Halve endives lengthwise, making sure to keep them from separating. Brush with olive oil and season with salt and pepper.

Place on hot grill, cut side down and grill for 6 minutes. Turn carefully and grill until just tender, about another 6 minutes.

(A ridged grill pan may also be used. Brush pan with olive oil before placing endive on it.)

May be served hot as a vegetable, or cold as a salad, with vinaigrette.
