Savory Egg White Scramble with Curtido and Broccoli

Curtido is a lightly fermented cabbage relish, typical in Central American cuisines. It resembles sauerkraut, which Sonoma Brinery also makes.

Egg whites
Salt and pepper
Butter
Broccoli, cut into florets
Garlic
Fresh lemon juice
Sonoma Brinery Curtido, room temperature
Sriracha

 

Season the egg whites with salt and pepper. Scramble in butter.

Steam the broccoli. When cooked, toss with crushed garlic and a squeeze of lemon juice.

Make a bed of the broccoli, top with the scrambled eggs whites, and then with the curtido.

Drizzle with sriracha.
