Spicy Scrambled Eggs with Curtido, Bacon and Olives

Curtido is a lightly fermented cabbage relish, typical in Central American cuisines. It resembles sauerkraut, which Sonoma Brinery also makes.

Chopped onions
Green olives stuffed with jalape�os
Salt and pepper
Sonoma Brinery Curtido
Eggs, lightly beaten


Saut� bacon and onions until both are cooked.

Add green olives and curtido. Warm.

Season with salt (if desired) and pepper.

Add eggs. Cook until eggs are cooked to desired doneness.
