Creamy Vegetable Tortilla Soup

3 Carrots
4 Celery stalks
2 tablespoonsVegetable oil
1 large can or boxLow-sodium low fat chicken broth
1 canDiced tomatoes in juice
Salt and pepper
Mrs. A's Salsa Buena
Diced avocado
Tortilla chips
SqueezeFresh lime juice


Cut the onion, carrots, celery and zucchini into small cubes.

Saut� in oil until soft.

Add chicken broth and diced tomatoes with the juice

Cook for 1.2 hour, season with salt and pepper

Blend with a hand blender until smooth

Top each serving with Mrs. A�s Salsa, avocado, a squeeze of fresh lime juice, and tortilla chips.
