Prune & Walnut Oatmeal Cookies

4 ½ ouncesUnsalted butter, room temperature
½ cupDark brown sugar, packed
¼ cupSugar
1Egg, room temperature
1 teaspoonVanilla extract
½ cupWhole wheat flour
½ cupAll purpose flour
1 teaspoonBaking soda
1 ½ teaspoonsCinnamon
½ teaspoonSalt
¾ cupOld fashioned oats
½ cupCoarsely chopped Taylor Brothers Prunes
½ cupCoarsely chopped walnuts


Preheat oven to 350�F.

Cream together butter and sugars for about 1 minute.

Add egg and vanilla extract, beat in till combined.

Add dry ingredients until just combined.

Fold in oats, prunes, and walnuts.

Form into balls. Makes about 2 dozen 1-inch balls.

Bake for about 10 minutes. The edges should be golden brown, but don't overbake unless you prefer a crisper cookie.
